LIVE> PEASE PUDDING [LS]*** 00:05:11 08:06:30 Phoner/Yesterday, while
reading the Morningside mail with Stuart McLean, I came across a reference
to pease pudding. It was in a letter from a NorthBay, Ontario woman, who
was talking about the homesickness she feels for Gander. To ease the
feeling, she often cooks Newfoundland dishes, including -- you guessed it!
-- pease pudding. Well much to our embarrassment, neither Stuart or I knew
for sure what pease -- that's spelled P E A S E -- pudding was. Diane Butt
of Corner Brook, Newfoundland, is on the line to set us straight.
NOTE> How do you make it? You must soak your yellow split peas overnight,
otherwise they'll be as hard as bullets. Once the peas are soaked, put them
in a pudding bag or cheesecloth and then add that to your pot of salt beef,
cabbage, turnip and carrots, and boil away. The key is to cook this mixture
until it's a nice yellow mush. At that point, take the pudding bag out of
the pot, empty the contents into a bowl and mash the peas until they'er
nice and creamy, add some butter and pepper and serve with jigg's dinner.
Diane swears that you haven't lived until you've eaten pease pudding and
jigg's dinner (that's a one pot meal of salt beef, turnip, cabbage,
carrots, and of course pease pudding). The peas absorb the salt from the
meat and it's absolutely delightful.

Morningside we're taking the pulse of the visual and performing arts in
Canada. Today we go to the centre of the country...to Winnipeg. The city
has been called the performing arts capital of Canada. We've brought
together a group of people to talk about how the city's arts community has
achieved such success. Gail Asper is a lawyer in Winnipeg. She sits on the
board of the Manitoba Theatre Centre. Nancy Drake is an actor, director and
drama teacher. And Max Tapper is the executive director of the Winnipeg
Symphony Orchestra.

today members of Parliament return to work in Ottawa. One of the most
important orders of business of the new session will be Paul Martin's
budget, expected sometime early in March. This morning, two observers of
the federal government's economic policies. Lynne Toupin is executive
director of the National Anti-Poverty Organization. She co-chaired the
steering committee of the Alternative Federal Budget project. She's in
Ottawa. Lars Osberg is an economist at Dalhousie University, and co-editor
of "Unnecessary Debts," a new book published by Lorimer. He's in Halifax.

Tenth International Chopin Piano Competition in Warsaw. It was the first

was in Halifax and Lucille Tombari was in Toronto. Paul's brother Tommy is
also the inspiration for a line of children's book and music tapes that
Paul has published under his "Tommy Tunes Publishing" label. Paul has gone
into schools with these tapes to help young students understand more about
special people like his brother Tommy.
